Slow Cooker Shredded Pork

5-7lb pork shoulder or Boston Butt

2 Tbs Chilli powder

2 tsp garlic powder

2 tsp onion powder

1 Tbs freshly ground pepper

1 Tbs kosher salt (I add a little more)

1/2 tsp cayenne pepper

2 cups of store bought BBQ sauce or you can make your own special sauce

In a small bowl mix all the spices together and rub it all over the pork and let sit for 2 hours. Place the pork in a large crock pot and DO NOT add any water, only the pork. The pork will produce a lot of drippings and fat. Cook on low for 10 hours. I usually do this at night when I go to bed and the pork is ready in the morning. Pull it out of the crock pot and I pull off the fat from the pork and shred it and then add your favorite BBQ sauce. I love Scott's BBQ sauce. It doesn't have any sugar in it but I do have to doctor the shredded pork with a little more salt and spices.
