Frozen Pudding Sandwiches

I'm so happy I discovered this recipe. My kids ask me all the time to make them and I have even been able to make them lower in fat and sugar and they still taste great.


1 box of low fat Graham Crackers

1 small box of sugar free instant vanilla pudding

1 16 oz tub of lite cool whip

2 cups 1 or 2% low fat milk

1 cup of Enjoy life mini chocolate chips

In a medium bowl mix the pudding mix with the 2 cups of cold milk and stir until well blended and thickens. Fold in the tub of cool whip and then the cup of mini chocolate chips. Place in the refrigerator for 20-30 minutes.

Break into squares the graham crackers and I start on my countertop cutting off Saran Wrap or the Press and Seal wrap to wrap each sandwich in to place in the freezer. Once you are ready, use a little more than a tablespoon of the pudding mixture and dollop it onto a graham cracker square and place another on top and then wrap in the plastic wrap. This recipe should make close to the whole box of graham crackers. Place in the freezer in a Tupperware bowl until frozen. At least 2 hours.

Your kids will love going in the freezer and grabbing these as a tasty treat!
