
Chocolate Coconut Protein Cookies

Ingredients
2 cups gluten free all purpose flour
1/4 cup cacao powder
1 egg
2 Tbs butter
1 cup shredded unsweetened coconut flakes
1/4 cup protein nut milk
1/2 cup unsweetened apple sauce
1/2 cup Enjoy mini chocolate chips
2 scoops collagen protein powder
1/2 cup whole milk greek yogurt
2 tsp vanila extract
1/2 cup chopped walnuts or pecans (optional)
Preheat oven to 350 degrees. Mix all above ingredients together. Place parchment paper on cookie sheet and spoon out a heaping tablespoon of cookie mix and flatten on cookie sheet. Bake for 15 minutes and this recipe should make 12-14 large cookies. Enjoy!
